Mate this should have been in the painting section but dont worry bout it. Chaos god will move it when he gets on.
I half assemble my models first (everything but the arms and weapons so i can get everything. I then paint the details and the arms before putting them in place. This way you wont miss anything :D
Sometimes its easier to paint them whilst on the sprue and when using spray paints its much easier, but when you remove the component little bits where the component was joined to the sprue will not be covered and thats really annoying.

It depends the models. The majority of models i assmeble first but leave off the gun (cos its usually that that gets in the way)
NEVER PAINT MODELS STILL ON THE SPRUE
This is because you will then have to paint the place where the model was attached to the sprue as it will still be bare plastic when you assemble the model.

I don't think many people would paint them still on the sprue, (Just wondering did you try that  )

Alot of beginner painters still paint them on the sprue. And a few experianced painters undercoat them on the sprue. I dont know why because it is a bloody stupid thing to do...

Spartan 118 painted his first marines on the sprue but he just left the bits where they were attached unpainted.
