The Ultimania for FFVII is being released on September 9th shortly before the release of AC in Japan. Unfortunately, I believe that the Ultimania will only be selling in Japan. :(

This book is supposed to have interviews with the creators, and it's supposed to discuss many of the remaining questions about FFVII. It has 592 pages, and it sells for 1995 yen. You can see the cover art for it here:

Me neither! I think my only hope locally are stores like AnimeTech and some of the video shops at KLCC. When I went to Speedy Videos at Megamall(?) about a year ago, they had a row of soundtracks from the FF games and stuff... only to go missing when I went back a few months later. @_@;;;
